Paris: Chocolate Cake

After reading 'The Sweet Life in Paris' and learning that every French woman (or man) has a chocolate cake in their repertoire, I figured I better start my search for the perfect cake! Now I just have to memorize it and be able to make it at a moments notice!
'The Sweet Life in Paris' had a very tempting recipes for a almost flourless chocolate cake, which made me very excited because my host father (from back when i lived in France) had the most delectable flourless chocolate cake one could imagine. Speaking of which that is a recipe i should get. But in the mean time this cake will do. It was amazingly quick and very tasty. Both great qualities in cake as far as i am concerned!

This cake had six ingredients (again no recipe because of my fear of the law) bittersweet chocolate, butter, sugar, eggs (separated), and a mere 2 tablespoons of flour.

the hardest part of this recipe is almost over! kind of... but it really is so simple it puts boxed cake mixes to shame. although sometimes a good Fun Fetti cake is hard to resist!

now for the fun part...


The mixer is working away to make nice fluffy egg whites! I am so happy to have a Kitchen Aid, it makes life much easier in these situations. But you could still reach stiff peaks with a whisk and some nice arm strength!

The final step



Remember that one never wants to over mix a cake! So I just mixed this until it was one solid color. NO LONGER!


VOILA! In the oven just until the center is firm to the touch, just like mixing you do not want to over cook a delicate cake such as this one!
NOTE: in order to keep the cake from sticking to the pan I oiled it then covered it in a light dusting of flour. It worked very well.
 
 

Now I must say that knowing how to make a killer chocolate cake is a skill I am proud to possess! I love that the top has a sheen like it has been iced! This cake is a winner!
